Forbidden Rice Veggie Bowl

Black rice, also referred to as ‘forbidden rice’ has so many amazing health benefits.

It is less common that white or brown rice but of all the rice varieties it is the highest in antioxidants and is rich in iron, fibre and protein! It also looks really cool and this recipe is really really easy.


  • 1 cup of black rice
  • 1 tbsp coconut oil
  • 1 cup of frozen edamame beans
  • Half a white onion chopped
  • 1 clove of garlic minced
  • 2 carrots chopped into half moons
  • 1 courgette chopped into half moons
  • 4 big chestnut mushrooms sliced
  • 1 cup of purple cabbage sliced thinly
  • 2 cups of kale
  • Sesame seeds
  • Sea salt and pepper
  1. Cook the black rice as it says on the packet. I would rinse the rice in a sieve before boiling it in a saucepan
  2. Whilst this is cooking, melt the coconut oil in a frying pan and once it is all melted, add the onion and garlic on a medium heat and cook till translucent
  3. Season with a little salt and pepper then add the courgette, kale, edamame, carrot and mushrooms. Sauté the vegetables for about 8 minutes
  4. Add the purple cabbage then cook for a further 2 minutes. Turn off the heat
  5. Drain the rice and rinse with hot water in a sieve
  6. Add the rice to a bowl and top with the sautéd vegetables and sprinkle some sesame seeds on the top
