So its Halloween weekend and that means loads of pumpkins!
But I was absolutely shocked to read in an article by the Independent that the UK waste 18,000 tons of food while carving pumpkins, thats’ the equivalent of 1,500 double decker buses. Thats a lot of pumpkin. Plus theres so much you can do with pumpkin flesh. Make pumpkin pie, pumpkin brownies, pumpkin soup pumpkin everything!
So to keep in the Halloween spirit and not waste my pumpkin, i decided to make pumpkin chilli. This recipe comes from Thug Kitchen and here it is: https://www.popsugar.co.uk/fitness/Pumpkin-Chili-Recipe-38964534
If you haven’t heard of Thug Kitchen, you should. Their no nonsense attitude to cooking encourages people to stop using the microwave, stop relying on processed food and cook with real ingredients that are great for your body. They absolutely ruin the stereotype that the vegan diet is all about eating dainty portions of no flavour bowls of ‘rabbit food’. As Thug Kitchen would say. Eat your veggies. Eat like you give a fuck.
This recipe i really loved. I’ll be the first to admit I’m a bit of a wimp when it comes to hot food, but this was just the right amount of heat I like in a chilli. If you’ve never had pumpkin before, it kind of tastes like a marrow or courgette. It has a very subtle flavour which makes it really versatile. A definite must try for this spooky time of year!
